Raw Lemon Slice (Raw, Paleo, Gluten Free)

IMG_3066 (427x640)One of the lovely things about raw desserts and snacks is that it can be kept in the freezer. Before we left the country, I made up a batch of these Lemon Slices. Some we ate of course, but most of it was kept in the freezer. That way, when we are back, there is a little something there for us to munch on, or to put in snack boxes. IMG_3062 (640x427)

Since discovering doterra essential oils, there is no turning back. I love how many of their oils are food grade, which means it can be added to raw desserts and cooking. This raw lemon slice, I feel, was enhanced by the lemon essential oil that I placed in there. One word of warning though. I find that a little goes a long way! IMG_3064 (640x427)

  1. Base
  2. 1 cup of mixed almonds and walnuts
  3. 1/2 cup desiccated coconut
  4. 2 medjool dates soaked in warm water for a few minutes
  5. 1/4 cup coconut oil
  6. Lemon
  7. 3/4 cup cashews soaked over night or in warm water for 20 mins.
  8. 1/2 cup desiccated coconut
  9. 1 cup coconut milk
  10. 2 tbsp coconut butter
  11. 4-5 drops of lemon essential oils Doterra
  12. 1/4 lemon juiced and zest
  1. Blitz base up till it comes together, adding some water if needed. Press into 9 by 9 baking tin.Freeze.
  2. Place lemon ingredients in food processor and blend it till it becomes and nice and creamy. Taste as you go along to make sure it is no longer grainy. I would also scrap the sides of needed. Spoon onto base. Freeze for at least 1-2 hrs.
